Madrid Fusión is an annual culinary event held in Madrid. It is considered one of the most important gatherings of chefs and culinary experts in the world. The event offers cooking demonstrations, tastings and conferences on the latest trends and techniques in the culinary industry. Renowned chefs, restaurateurs, food critics and culinary enthusiasts from around the world attend. The conference is usually a place where chefs showcase new techniques, ingredients and trends in the culinary world.
Madrid Fusión, the world's biggest gastronomic show, returns to Ifema from 23 to 25 January, and this year it does so with the aim of crossing borders and offering the public new sensations based on this year's emblem: "No limits". Once again, we are once again asking for the wish that this rupture also goes beyond the doors of the fairgrounds and floods the streets, restaurants and bars of the city: gastronomy, for those who eat it.
As in every edition, there will be a competition of pinchos, croquettes, sandwiches, omelettes... as at congresses such as Madrid Fusión, competitions based on popular dishes that usually put must-visit places on the map are commonplace. Some of the stands will feature lesser-known but totally delicious products. In the second edition of the "Cocinando el mar" competition, the chefs will have to use borriquete, one of those fish - white and usually found in the Cadiz area - which is always in the shadows of more popular species such as cod or hake, as the basis for their creations. How to get to Madrid Fusión at IFEMA?
IFEMA (Feria de Madrid) is located in the north of the city, close to Barajas airport. There are several ways to get to IFEMA by public and private transport. We recommend the latter, but all are viable:
Taxi or private transfer: The fastest and most efficient way is to book a private taxi to Madrid Fusion to get to IFEMA. A professional driver will pick you up at Madrid airport, Atocha station or at your hotel to take you to your destination.
Metro: the nearest metro station is Line 8, "Feria de Madrid" Station, which is located right next to IFEMA.
Bus: several bus lines connect IFEMA with different parts of the city, such as lines 150, 152, 153, 828 and 829.
Cercanías: The nearest Cercanías station is "Aeropuerto T4", which is a 5-minute walk from IFEMA.
Car: If you wish to travel in your own car, IFEMA has a large car park with more than 10,000 spaces. Just follow the directions on your GPS until you reach the fairgrounds.
Car hire with driver: A highly recommended and reliable option is to rent a car with driver to get to Madrid Fusión with advance booking.
Public taxi: Taxis are widely available in Madrid and can be easily hailed on the street or called to your location.
Madrid Fusión 2023 Programme
The main objective of Madrid Fusión 2023, as every year, will be to explore new trends and offer an opportunity to share knowledge with the best international experts in gastronomy.
This year's protagonists will be restaurants different from what we are used to, establishments in inaccessible places such as Coke (Faroe Islands) and Proyecto Mil (Peru), urban kitchens such as Kitchen Table (United Kingdom), and river cuisine based on fish such as Taberna Ó Balcão (Portugal) and Teru Sushi (Japan).
The main stage will feature top chefs from all over the world, such as the Italian Massimiliano Alagemo, from the restaurant Le Calandre, who at 28 years of age is the youngest to receive three Michelin stars.
Madrid Fusión will feature The Wine Edition tasting room and various competitions such as "Best Iberian Ham Croquette", "Cooking with Mojo", "Best Beer", "Restaurant Bread" and "Signature Sandwich". There will also be an award for sustainability and innovation, as well as the "Cocinero Revelación 2023" and "Pastelero Revelación 2023" awards for new talent in the sector.
Main speakers at the Madrid Fusion Congress
This year, some of the world's most prestigious chefs will visit Ifema for Madrid Fusión. From Peru, chefs Virgilio Martínez and Pía León will be offering their expertise, and from Japan, the master of sushi, Takayoshi Watanabe. Also attending the congress will be the chef from the Faroe Islands Poul Andrias, the Italian Massimiliano Alajmo and the Spaniard Dabiz Muñoz, awarded 3 Michelin stars at his restaurant DiverXO.
